String study
A "string study" is actually a very simple method to demonstrate unnecessary paths in kitchen work areas.

You basically compare the paths - created by work processes - for incorrect and correct kitchen layouts.

To identify the path lines, a string is attached to the kitchen user, and at the end of the day the length of the string used is measured.
